Recipe: Sincronizada by Taqueria La Frontera in White Plains, NY

Back in May of this year I went live on my Instagram @breakfastatetiffany for the first time. I did a cooking demo with Mariela of Taqueria La Frontera (55 Battle Ave in White Plains, NY) and I’ve been meaning to share the recipe ever since. There were definitely a number of issues on my end from losing the jalapeños for my guacamole to failing miserably at getting my electric burner to heat up but they all paled in comparison to the app crashing and deleting the entire video after it aired. Le sigh. While the footage had vanished, it hadn’t been for nothing because I was still left with an incredible result, one crispy oozing sincronizada.

Essentially this dish is the Mexican take on a ham and cheese which is sandwiched between two tortillas and served piping hot. It’s a dish the whole family can enjoy (and maybe even make) together. Thanks to Mariela for your time and being a such patient teacher. It feels important to note that Mariela is a woman of many talents. Guacamole Ingredients:

makes about a half cup

One Avocado
Diced 1/4 Jalapeño
One 1/4 Medium Onion
Diced Cilantro to taste

Recipe

1. Cut avocado in half lengthwise.

2. Hold the half of your avocado still containing the pit with a towel in your hand. Gently strike the pit with your knife and twist to remove.

3. Break up the avocado in it’s shell with a spoon and scoop into a bowl.

4. Add diced jalapeño, onion and cilantro.

5. Mix and mash it together. Set aside.

Sincronizada Ingredients:

4 Tortillas
4 Slices of Ham
2 oz Chihuahua Cheese
(or Mozzarella works fine!)
1 Tbsp Butter

Recipe

1. Heat skillet over medium and add a knob of butter.

2. Add ham to skillet until it starts to sizzle.

4. Place the cheese on top of the ham and let it melt while at the same time placing one tortilla next to it in the skillet.

5. Sliding a spatula under the ham transfer the it along with the cheese flat onto the tortilla.

5. Warm the second tortilla next to it on the skillet. There may not be room for it to sit properly but don’t stress it, do what you can to make it work.

6. Place the second tortilla on top of the first one.

7. Flip it over to crisp both sides.

8. Remove from skillet and cut into four equal parts.

9. Top with your guacamole and enjoy!
